Chambar is something of a downtown Vancouver dining institution for good reason. They know their sweet spot – high energy upscale without too much pretension – and deliver consistent quality for a reasonable price. That’s why this was our fourth visit (we go every time we’re in Vancouver).
Their cocktail list isn’t extensive, but it’s inventive and the drinks are very well executed. The menu is similarly well executed, with a nice mix of more traditional dishes done very well (their Moule Frites are justifiably famous) and more inventive fare.
We started off our dinner with two excellent cocktails: the Rock and/or Roll, and the Blue Fig. The Blue Fig was outstanding – a fig infused gin martini with a side of blue cheese!

Once cocktails had been sufficiently lingered over we moved onto appies: Les Coquilles St. Jacques Crues (Scallop ceviche) and a brilliant Le Pain Marocain. The Moroccan flat bread was easily the most pleasant surprise of the night.
We had to have a Moule Frites. We chose the Coquette, and it was as good as we remember (and the portion is huge). If you find yourself at Chambar you can’t leave without having their Moule Frites! We shared a main – Thon et Betteraves, a nice. chargrilled tuna dish.
Finally, we layered on a completely unnecessary side (there was a LOT of food) because we adore Brussels sprouts. The Fried Brussels Sprouts with blistered shishito were amazing, beautifully brought together with a tahini miso and honey espelette pepper were absolutely delicious.In spite of being stuffed we polished off the whole bowl!
At $285 all in this was good value for money.
