A big tub of arugula can be a challenge for us, as we only have two mouths to feed. This simple sauce has become a staple in our house. Whenever we have dinner plans that involve buying this peppery, delicious lettuce, we take half the tub and make the sauce right away and freeze it.

How To Use It
Meats:
Serve this with some roasted chicken, grilled shrimp, or pan fried scallops. Breakfast:
Fry some grape tomatoes, onions and garlic in a pan until the tomatoes burst. Add in a can of rinsed cannellini beans until heated through. Mix in your arugula sauce and plate. Top with a poached or fried egg and sprinkle Asiago cheese. We often pre-make the tomato and onion mixture and reheat it in the microwave, then top with a freshly cooked egg for a quick morning meal. Roasted Vegetables:
This is beautiful way to complement roasted vegetables. The vegetables we find go best with this sauce are: bell peppers; carrots; shallots; green beans; asparagus, and; butternut squash. Toss in a little bit of cooked bulgar or quinoa if you want a low carb but extra satiating side dish. Peas, Carrots and Corn:
This classic, simple side dish comes to life with this arugula sauce. Tomato and Cucumber Salad:
